This ice cream like Acai smoothie bowl is basically like having dessert for breakfast. Açai berries are full of antioxidants, low GI, giving you a nice slow release of energy, and also contain some omega-3 essential fatty acids. But if you need a healthy breakfast idea and have a hard time finding Açai then the same recipe is equally as delicious and also very nutritious if you substitute them for another berry of your choice.
1 packet of unsweetened frozen acai
1 cup frozen mixed berries
1 ripe banana
125ml of milk (cow, coconut, almond or cashew)
200g greek yogurt
Toppings of your choice (berries, coconut flakes, granola, cocoa nibbles etc.)
1. Place all of the acai bowl ingredients together in a blender.
2. Blend until smoothly combined.
3. Pour into a bowl and top with berries and a variety of toppings.
Freeze your banana to keep your acai berry bowl thick and extra refreshing.
